I got to go home to celebrate my Dad's birthday and we went to this restaurant that was a TOTAL dive which I love. It was in this super hipster part of town and had a great drinks and food menu. My dad loves going there for their Pancake Sliders which are exactly what they sound like - 2 pancakes sanwhiched around a fried egg and sausage and they are served with maple syrup. YUM! He also loves the BEAT sandwich - 2 pieces of think, yummy bread, bacon, a fried egg, avocado and tomato. While both of these things sounded delicious I was drawn to the Trash Tots! Y'all, by now you should know that I freaking LOVE potatoes. AND I love all things loaded. I'm talking nachos, tries, potato skins, and tater tots are no different. The Trash Tots are tater tots with sauteed onions and jalapenos, crispy bacon, a fried egg, and topped with spicy mayo so I was totally in!
This is a perfect example of a dish that could so EASILY be made in a way that is nutrient dense. At first glance, the #1 offender for a dish like Trash Tots is the oil. So many restaurants, not just bars, use highly refined oils like canola oil, soy bean oil, or generic vegetable oils. When we're dealing with fried food, having those already unstable oils be heated and reheated and reheated in a deep fryer further damages the oil. So I went home and got to work recreate this meal into something totally clean and still super delicious and satisfying!
When I started my first Whole 30, I decided that if I was going to do it then I wanted to go big! To me, that meant homemade everything. This lasted about a week, except the homemade Cashew Milk. That became a staple in my fridge. Homemade cashew milk is SO much creamier and a much better flavor than the store bought cashew milk. It makes smoothies super tasty and eggs rich and creamy. All you need is a high powered blender and raw cashews. I have found that raw cashews are cheapest from Trader Joe's! The best part about cashew milk is that you don't need to put it through a nut milk bag so no straining. It is so easy and yes so impressive!
