Easy homemade cashew milk

When I started my first Whole 30, I decided that if I was going to do it then I wanted to go big! To me, that meant homemade everything. This lasted about a week, except the homemade Cashew Milk. That became a staple in my fridge. Homemade cashew milk is SO much creamier and a much better flavor than the store bought cashew milk. It makes smoothies super tasty and eggs rich and creamy. All you need is a high powered blender and raw cashews. I have found that raw cashews are cheapest from Trader Joe's! The best part about cashew milk is that you don't need to put it through a nut milk bag so no straining. It is so easy and yes so impressive! Peanut Butter & Greens Smoothie

Prior to my first Whole 30, smoothies were my every day breakfast. I love that I can take them on the go and pack so much nutrients into something that tastes so yummy. I'll be honest, during my first round of Whole 30, I didn't really stick to the rules. I made sure my smoothies were compliant, but I still had them pretty often. During my second round, I obeyed and traded my daily smoothie in for egg based breakfasts and I noticed a HUGE difference. Loading up my mornings with protein and healthy fats kept me fuller longer. I also noticed that starting my day off with so much fruit often set me up to have quite the sweet tooth in the afternoon. However, I still LOVE my smoothies. 

My Peanut Butter and Greens Smoothie is full of both good fats from the homemade cashew milk and avocado, protein from the Amazing Grass Superfood Powder, and greens from the spinach. I used the peanut butter flavored powder that is only sold at Whole Foods, but you can find this Chocolate Peanut Butter Powder from them at amazon. You could also use this. If you aren't looking to replicate the peanut butter flavor, I really like this protein powder.

I topped my smoothie with chia seeds, slivered almonds, unsweetened shredded coconut, and bee pollen. I get my bee pollen from a local farm! Great for all of us who suffer from seasonal allergies!

I also love throwing on some granola or fresh berries!  I LOVE the Thrive Market grain-free granola, but this would be SO yummy on top of this smoothie. ​

Fun fact about me, I am a cross country coach! This means I am often rushing out the door to early morning practices. We stress to the runners the importance of eating something prior to coming to practice, especially when we are running in the August heat. I am the first to admit that I don't love eating first thing in the morning, and I really don't like eating in a rush. These little protein balls are full of healthy fats from the nuts, quality, grass fed collagen protein, and quick carbs from the dates. They taste like a peanut butter and jelly sandwich which is such a guilty pleasure for me!
